Recently, mum and her colleagues from SMK Air Itam (a secondary school) went to ATI Asia, a Tourism Training Centre, to learn the art of simple pastry baking. There were three sessions altogether and these sessions were split into different days. For the first session, we learned how to make walnut tarts, walnut pies and cream puffs.
Chef Chan, a lecturer at ATI Asia College, who has about 20 years in bakery experiences, demonstrated to us the correct way of cooking pastry cream. He was assisted by his student, Khoo Chee Keong, who is currently pursuing a Diploma in Hospitality Management.
No school bell and students to attend to, just us having fun time enjoying cooking and discovering our potential talents in ?????????
"You have to be gentle!" says Chef Chan when demonstrating the delicate process of lining the rolled pastry dough onto the baking tin to make a base for the walnut pie.
Wow, the dough must be tough! Pn.Lim had to pin down the mixing bowl with both hands while Miss Tai had to use extra 'horsepower' to get the dough going. Well, kind of good exercise for toning up your arm muscles????
Wow, look at the plate of beautiful cream-puff swans 'created' first time by Pn.Fairus and her partner at the end of the day!
Finally at the end of the session, the teachers got together to enjoy the 'fruits' of their baking! We really enjoyed ourselves! We would like to say thanks to ATI ASIA for giving us the opportunity to learn pastry baking at the Tourism Training Centre and also to Chef Chan and his assistant for showing us the 'know-how' of doing it.
